Meats - Rule of thumb - 1 drop
of essential
oil to 1 Tablespoon of vegetable oil
brushed on. Strong meats and fish are especially enhanced with
oils.
Even though garlic is not usually an “essential oil” it is great as
a meat tenderizer
You get 2 for 1 - flavor plus tenderizer.
you can make your own by soaking 4 garlic cloves in 1 teaspoon of
olive oil
(Can substitute vegetable oil)
You can also put essential oils in marinades and stuffings - Just
remember
that a little
goes a long way. Some of our favorites essential oils for
meats and fish are any of
the citrus oils, Italian herb oils, etc.- Let your imagination and
taste buds reign supreme.
Beef recipe:
1 tsp garlic oil (put the soaked garlic cloves in slits in meat)
1 drop Orange EO
1 drop Nutmeg EO
1 drop Cinnamon leaf EO
Combine the 4 oils above and let set ½ hour.
Brush on meat, then roast, grill or braise.
Meat marinade
(Good for
2# of meat)
Add 1 drop each of Thyme, Marjoram, & Clove EO to 2 Tbsp olive
oil and brush on meat
Add oiled meat to this marinade - Soak for at least 6 hours
1 cup red wine
2 cloves crushed garlic
1 small diced onion
1 drop Orange or Mandarin EO
Add Salt & Pepper to taste
Lamb recipe
1 tsp garlic oil (put the soaked garlic cloves in slits in meat)
1 drop of Rosemary EO
Combine the 4 oils above and let set ½ hour.
Brush on meat, then roast, grill or braise.
Chicken recipe
Make a marinade of: and let soak ½ hour or store until
needed.
4 Tbsp Honey,
1 wine glass of white wine or apple cider
2 drops each of Orange & Lemon EO
Use on baked or grilled chicken
Grilled Chicken marinade
4 Tbsp honey
2 tsp. Mustard
2 drops each of Orange & Lemon EO
(Can also add 1 Tbsp. apricot jam)
Stir into a smooth paste and brush on.
Fish marinade
Add 1 drop each of Fennel & Lime EO to 1 Tbsp olive oil and brush
on fish
Add oiled fish to this marinade - Soak for at least 3
hours.
1 cup white wine
1 crushed clove garlic
1 small onion diced
Salt & Pepper to taste
Vinegars &
Salad oils
General rule of thumb for making your own salad oil
is 1 drop of EO to teaspoon of vegetable oil.
(Caution - do not use a strong flavored oil)
Any of the citrus oils are great used in oils on
salads. Approx.
20- 25 drops per cup of oil.
General rule of thumb for making your own vinegar
is 3 drops of EO to 2 Tablespoons of vinegar.
Use any fragrant oil such as palmarosa, geranium or rose for
salads.
Lemon vinegar is great on fish.
Mix 1 drop of your favorite oil in 1 cube of softened butter
to top
your potatoes,
toast or other dishes.
Add 1 drop of essential oil to 8 oz.of creamed cheese,
yogurts, sour
cream etc.
for your fruit or salad dishes
Steamed vegetables
Try putting 1 drop of an EO of your choice in water. Let your
imagination
guide you!
Some suggestions are:
Nutmeg, lemon, orange, mace, geranium, lavender, oregano, thyme, basil
- and the list goes on.
Desserts
Beautiful and flavorful way to decorate your many cakes and
dishes
Crystallized petals
Into a stiff egg white meringue add 1 drop of EO
Dip clean petals into mixture - place on rack to dry and sprinkle
lightly
with
castor or powdered sugar
Souffle’
1 drop of your favorite oil in 2 ½ cups of liquid.
It makes some of the best souffle’s because you can get your
flower
fragrances without the risk of the souffle’ sinking.
Rice Pudding, Custards or Dessert Sauces
1 or 2 drops of your favorite EO flavor per cup of liquid or
rice.
Try any of your citrus oils or palmarosa, nutmeg, cinnamon leaf,
geranium to name just a few.
Sorbets, Ice Creams & Frozen Yogurts
2 drops of your favorite EO flavors per cup of liquid
For 2 ½ to 3 cups of liquid you can add more than one EO
For Example - Try Nut and flower and citrus EO’s
Butter frosting
1 cup soft butter or margarine
1 tsp vanilla
4 ½ cups powdered sugar
3 to 4 Tbsp milk (to good consistency)
Mix & match your favorite citrus, nut or flower EO’s - 6
drops
Chocolate or carob cake
Add 6 drops of peppermint EO to your favorite for a
wonderful chocolate-mint cake.
Carrot cake
Add 3-4 drops of any citrus and/or nut EO to your favorite
Special EO flavored honey’s or Sugars for
various
uses
3 drops EO per cup of honey (Can also add petals for appearance)
2 drops of EO on a piece of paper towel put in the sugar bowl for
sugar.(at
least 24 hours)
Try your favorite flower and citrus oils but don’t limit your
imagination.
Ylang ylang, lavender, palmarosa , etc.
Granola’s and
Muesli’s
Add a drop of your favorite citrus oil and/or nut oil.
Breads & Pastries
4 to 5 drops EO per pound of dough
Mix and match. - Let your imagination be your guide.
Try citrus, nut, flower and spice (cinnamon, nutmeg, ginger, etc)
For a great herb bread use some Italian herbs - i.e. Oregano, Thyme,
Basil, etc.

Here is a list of some of your most common
essential oils
used for cooking and foods that you might consider putting them
in.
Your imagination and taste buds are really the only limit to what you
can
put them in!
As a rule you will use from one to four drops
in
the various dishes. Caution do not overdo - it is so
easy to
overdo because of the strength of essential oils. What you want
is
a subtle taste - not an overpowering one.
Essential oils not only flavor foods but
they add health
benefits such as medicinal & psychological values. Don't
hesitate
to also add some of the herb especially flower petals for color and
flavor
especially in cold dishes.
Use in Desserts, Ice Creams, Dips, Butters,
Salad Dressings,
Sauces, Marinades, Casseroles, Soups, Vegetables, Fish, Breads, Cakes,
Meats, Syrups, Jams & Jellies, Granola and the list goes on.
Tea Tree Oil - antiseptic, (one
hundred times
more powerful than carbolic acid.)antiviral, antibacterial, antifungal, ringworm,
sunburn, acne,
athlete's foot, toothache, pyorrhea.
Peppermint - digestive, respiratory
systems,
circulation, anti-inflammatory, antiseptic, indigestion, flatulence, bad breath, flue, catarrh,
varicose veins,
headaches, migraines, skin irritations, rheumatism, toothache, fatigue, keeps mice,
fleas
and ants away.
Chamomile German or Chamomile Roman
- nervous
conditions, insomnia, antibacterial, antiseptic, disinfectant, anti-inflammatory,
rheumatism,
teething troubles, eases herpes, and tetanus, burns, sunburn, psoriasis, eczema,
asthma,
hayfever, diarrhea, sprains strains, nausea, fever. It is analgesic, diuretic,
sedative,
and calming, anorexia nervosa, used in rejuvenation treatments.
Eucalyptus - chest problems and
colic, cools
the body in summer and protects it in winter. Anti-inflammatory, antiseptic, antibiotic,
diuretic,
analgesic, deodorizing, antiviral, sinusitis, candida, diabetes, sunburn, insect
repellent. There
is a wide range of eucalyptus varieties, any of which would be a useful addition to a
basic
care kit.
Geranium - works profoundly on the
emotions.
Makes chilblains disappear overnight and brings a radiant glow when used in skin care.
Vital component
in treatment of endometriosis, menopausal problems, diabetes, blood
disorders,
throat infections, nerve tonic, sedative, uterine and breast cancer, frostbite, infertility,
antiseptic,
astringent.
Thyme - antiviral antibiotic,
antiseptic, diuretic,
used in MODERATION as it is very strong. Wonderful for flu, when used in a humidifier
or diffuser.
Assists in the elimination of toxic wastes from the body. Whooping cough, warts
rheumatism,
neuralgia, fatigue, acne, discourages all manner of parasites and insects.
Lemon - water purifier, antiseptic
antibacterial,
insect bites, tension headaches, tonic action to the lymphatic system, stimulates the digestive
system,
disperse cellulite, keeps wrinkles at bay.
Clove - antibacterial,. antiseptic,
analgesic,
prevents disease and infection, toothache, digestive problems, muscular disorders, asthma,
nausea, sinusitis, sedative. Can be used for the
sterilization
of surgical instruments. Dilute with a carrier oil before using on skin.
